May Book Club Menu!

Our Dominican-themed book club food and drink were very successful and absolutely delicious!  We explored the cuisine of the Dominican Republic to go with our book choice This is How You Lose Her.  We listened to (and attempted to dance) merengue as we prepped and cooked.  Here’s pictures and links to the awesomely tasty recipes:

Needless to say, Pan con Aguacate is amazing. Grilled mini-baguettes, avocados, onions, and red peppers? What’s not to love?

Couscous and Sun Dried Tomatoes Tabouleh

Couscous and Sun Dried Tomatoes Tabouleh.  Aunt Clara’s recipe here.

This tabouleh was reeeallly good. The sun dried tomatoes gave it a nice acidity that paired beautifully with the fluffy couscous.

Tomatoes Filled with Cheesy Mashed Potatoes

Tomatoes Filled with Cheesy Mashed Potatoes.  Aunt Clara’s recipe here.

The Illiana girls love mashed potatoes and cheese, so anything that puts those together is ok by us.

Ponche de Frutas (Passion Fruit Rum Punch)

Ponche de Frutas (Passion Fruit Rum Punch).  Aunt Clara’s recipe here.

We put pear, strawberry, mango, banana, cherries, and pineapple in the punch. For the booze, we decided to go for a coconut-infused light rum. And yes, we drank the whole bottle. Where has all the rum gone??
